Bread Pudding

Cooking time 1 ½ hours

You will need:

  1. 4oz stale breadcrumbs
  2. 2oz flour (with plain flour, use ½ teaspoon of baking powder)
  3. 3oz shredded suet
  4. 2oz currants
  5. 2oz raisins
  6. 2oz sugar
  7. ½ to 1oz candied lemon peel or marmalade
  8. ¼ teaspoon of allspice
  9. ¼ teaspoon cinnamon
  10. 2 eggs
  11. milk to mix

Method

  1. Mix all the dry ingredients together in a bowl.
  2. Add the beaten eggs and enough milk to give a dropping consistency.
  3. Turn into a greased basin, cover with greased paper and steam

Baked Bread Pudding

Prepare as above making the mixture slightly more moist.  Turn into a greased pie dish and bake in the centre of a moderate oven (375 degrees Fahrenheit or Gas Mark 4) for about 1 hour.  If preferred, the pudding can be cooked at 300 degrees Fahrenheigh or Gas Mark 2 for about 2 hours.

Turn out of the dish and serve with custard, rum sauce or lemon sauce.
