Cooking time 1 ½ hours
You will need:
- 4oz stale breadcrumbs
- 2oz flour (with plain flour, use ½ teaspoon of baking powder)
- 3oz shredded suet
- 2oz currants
- 2oz raisins
- 2oz sugar
- ½ to 1oz candied lemon peel or marmalade
- ¼ teaspoon of allspice
- ¼ teaspoon cinnamon
- 2 eggs
- milk to mix
Method
- Mix all the dry ingredients together in a bowl.
- Add the beaten eggs and enough milk to give a dropping consistency.
- Turn into a greased basin, cover with greased paper and steam
Baked Bread Pudding
Prepare as above making the mixture slightly more moist. Turn into a greased pie dish and bake in the centre of a moderate oven (375 degrees Fahrenheit or Gas Mark 4) for about 1 hour. If preferred, the pudding can be cooked at 300 degrees Fahrenheigh or Gas Mark 2 for about 2 hours.
Turn out of the dish and serve with custard, rum sauce or lemon sauce.
