Ingredients
250g golden syrup
zest of one lemon plus juice
5 tablespoons of breadcrumbs
3 medium eggs
200g pack of butter softened
200g caster sugar (golden)
200g self-raising flour
5 tablespoons of milk
Method
STEP ONE
- Heat oven to 180 degrees centigrade, 160 degrees Fahrenheit or Gas Mark 4
- Mix the syrup, lemon zest and juice and breadcrumbs and spread over the base of a 1.5l baking dish
STEP TWO
- Beat the butter and sugar until pale and fluffy
- Then beat in the eggs one by one
- Stir in the flour and milk and dollop over the syrup
- Bake for about 35 – 40 minutes until golden and risen and a skewer poked in to the sponge comes out cleanish.
- Eat with lots of custard, cream or ice-cream and extra dribbles of syrup
