Lauren Ryder, Cahergal NS, aged 11


250g golden syrup

zest of one lemon plus juice

5 tablespoons of breadcrumbs

3 medium eggs

200g pack of butter softened

200g caster sugar (golden)

200g self-raising flour

5 tablespoons of milk



  1. Heat oven to 180 degrees centigrade, 160 degrees Fahrenheit or Gas Mark 4
  2. Mix the syrup, lemon zest and juice and breadcrumbs and spread over the base of a 1.5l baking dish



  1. Beat the butter and sugar until pale and fluffy
  2. Then beat in the eggs one by one
  3. Stir in the flour and milk and dollop over the syrup
  4. Bake for about 35 – 40 minutes until golden and risen and a skewer poked in to the sponge comes out cleanish.
  5. Eat with lots of custard, cream or ice-cream and extra dribbles of syrup
